PISTACHIO ICE CREAM

Ingredients:

  • 1.5 cups pistachios, soaked

  • 1 cup pitted medjool dates

  • 1 can coconut cream

  • optional: a pinch of salt & some vanilla extract

Instructions: Just blend & pour into mold & freeze!

NOTE: I know I added pandan extract and powder to this recipe in the video, but I definitely went overboard with it and it got way too earthy. until I land the ratios, I just omitted it from the recipe!

SHALLOT BALSAMIC VINAIGRETTE

Ingredients:

  • 2 small shallots

  • 3 pitted medjool dates

  • 1/4 cup balsamic vinegar

  • 1/4 cup dijon mustard

  • 1/4 cup olive oil

  • 1/4 cup tamari

  • 1/4 cup water

Instructions: Just blend together till super smooth
